Indulge in these Cheesy Garlic Zucchini Steaks that make a delicious and flavorful vegetarian dish or a delightful low-carb side. Tender zucchini slices topped with a blend of mozzarella and Parmesan cheese, infused with garlic and Italian seasoning, baked to perfection.

Ingredients

Zucchini Steaks:

  • 2 large zucchinis (cut lengthwise into ½-inch thick slices)
  • 2 tablespoons olive oil
  • 4 garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cheese Topping:

  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare zucchini: Place zucchini slices on the baking sheet and brush both sides with olive oil.
  3. Season zucchini: In a bowl, combine minced garlic, Italian seasoning, salt, and pepper. Spread this mixture evenly over the zucchini slices.
  4. Bake zucchini: Bake for 10–12 minutes until tender.
  5. Add cheese: Remove from oven, sprinkle mozzarella and Parmesan over each zucchini steak, and bake for an additional 5–7 minutes until cheese is melted and golden.
  6. Garnish and serve: Garnish with fresh parsley if desired before serving.

Notes

  • Great as a low-carb side dish or a vegetarian main.
  • Customize with different cheese varieties like provolone or pepper jack for added flavor.
  • For extra crispiness, broil the zucchini for the last 1–2 minutes.
