Ingredients
Zucchini Steaks
- 2 large zucchinis, cut lengthwise into 1/2-inch thick slices
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
Cheese Topping
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat and prepare zucchini: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange the zucchini slices in a single layer on the baking sheet. Brush both sides of the zucchini slices with olive oil and season with salt, black pepper, and Italian seasoning.
- Add garlic: In a small bowl, mix the minced garlic with a little olive oil. Spoon this garlic mixture evenly over the zucchini slices to infuse them with fragrance and flavor.
- First roasting: Roast the zucchini in the preheated oven for 12 to 15 minutes, or until the slices are just tender but retain some firmness.
- Add cheese topping: Remove the baking sheet from the oven and evenly sprinkle the shredded mozzarella and grated Parmesan cheeses over each zucchini slice.
- Second roasting: Return the baking sheet to the oven and bake for an additional 5 to 7 minutes, until the cheese is melted, bubbly, and starting to turn golden.
- Garnish and serve: Remove from the oven and sprinkle chopped fresh parsley over the zucchini steaks before serving for a fresh herbal finish.
Notes
- For extra crispiness, broil the zucchini steaks for 1 to 2 minutes after adding the cheese.
- Try adding crushed red pepper flakes for a spicy kick.
- You can swap mozzarella for provolone or gouda cheese for different flavors.
