Description

These Cheesy Garlic Zucchini Steaks are a flavorful and satisfying vegetarian dish featuring tender zucchini slices seared to perfection, brushed with a garlic and thyme olive oil mixture, then topped with Parmesan and melted mozzarella cheese. Ingredients

Zucchini Steaks

  • 2 large zucchinis
  • 1 tsp salt
  • 5 tbsp extra virgin olive oil (divided)

Garlic Herb Mixture

  • 2 cloves garlic, finely chopped
  • 1 tbsp fresh thyme leaves, chopped
  • Salt and pepper, to taste

Cheeses & Garnish

  • 2 tbsp finely grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish
  • Chili pepper flakes for garnish


Instructions

  1. Prepare the Zucchini: Slice each zucchini lengthwise into steaks and score the flesh in a crisscross pattern. Sprinkle evenly with 1 teaspoon salt and let them sit for 10 minutes to draw out excess moisture. Then, pat dry with paper towels.
  2. Sear the Zucchini: Heat 1 to 2 tablespoons of olive oil in a large nonstick pan over medium heat. Place the zucchini steaks flesh-side down and sear until golden brown, about 5 minutes per side.
  3. Make Garlic Herb Oil: In a small bowl, combine the remaining 3 tablespoons of olive oil with finely chopped garlic, chopped thyme, a pinch of salt, and freshly ground pepper. Mix well.
  4. Brush and Bake/Air Fry: Brush the garlic herb mixture onto the flesh sides of the seared zucchini steaks. Sprinkle the grated Parmesan cheese evenly over them. Transfer the zucchini steaks to an oven or air fryer and cook for 15 minutes to allow flavors to meld.
  5. Add Mozzarella and Melt: Remove the zucchini from the oven or air fryer. Top each steak with shredded mozzarella cheese and return to cook for an additional 1-2 minutes, just until the cheese melts.
