Potatoes:
- 2 pounds baby potatoes (halved)
Seasoning:

- 4 cloves garlic (minced)

- 1/2 teaspoon paprika
Cheese Topping:
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese

Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, pepper, Italian herbs, and paprika until evenly coated.
- Roast Potatoes: Spread the potatoes on the baking sheet in a single layer, cut side down. Roast for 25–30 minutes, flipping once, until golden and tender.
