Ingredients

Potatoes:

  • 2 pounds baby potatoes (halved)

Seasoning:

  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon paprika

Cheese Topping:

  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, pepper, Italian herbs, and paprika until evenly coated.
  3. Roast Potatoes: Spread the potatoes on the baking sheet in a single layer, cut side down. Roast for 25–30 minutes, flipping once, until golden and tender.
