Description

A quick and delicious Chicken Quesadilla recipe featuring tender seasoned chicken, sautéed onions and bell peppers, melted cheese, and crispy flour tortillas cooked on the stovetop to golden perfection.


Ingredients

Chicken Filling

  • 2 tablespoons olive oil (divided)
  • 1 pound chicken breast (cut into small cubes)
  • 1 small onion (diced)
  • 1 small red bell pepper (diced)
  • 1 (1-ounce) packet taco seasoning (or fajita seasoning)

Cheese and Tortillas

  • 2 cups shredded Monterey jack cheese (or any cheese blend)
  • 4 large flour tortillas


Instructions

  1. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 2 minutes on each side until fully cooked through. Remove the chicken to a plate and set aside.
  2. Sauté the vegetables: Add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onions and red bell pepper, cooking for 2-3 minutes until softened and fragrant.
  3. Combine chicken and seasoning: Return the cooked chicken to the skillet along with the taco seasoning packet. Stir well to evenly coat the chicken and vegetables with the seasoning. Remove from heat and set aside.
  4. Assemble the quesadillas: Lay out the tortillas on a flat surface. Brush one side of each tortilla with olive oil, then place them oil-side down. On one half of each tortilla, evenly spread ¼ of the chicken mixture followed by ½ cup of shredded cheese. Fold the tortillas in half to cover the filling.
  5. Cook the quesadillas: Heat a nonstick pan over medium-low heat. Place each folded quesadilla in the pan and cook for 3-4 minutes per side until the tortilla is golden brown and crispy, and the cheese is fully melted inside. Remove and serve warm.
