These Cheesy Chicken Fritters are a delicious combination of tender chicken, gooey cheeses, and flavorful seasonings, pan-fried to golden perfection. Perfect as a snack, appetizer, or even a main course!
Ingredients
For the Fritters:
- 1 ½ pounds boneless, skinless chicken breasts, finely chopped
- 2 large eggs
- ½ cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- â…“ cup mayonnaise
- ¼ cup all-purpose flour (or almond flour for low-carb)
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Prepare the Fritter Mixture: In a large bowl, combine the chicken, eggs, mozzarella, cheddar, mayonnaise, flour, green onions, garlic, paprika, salt, and black pepper. Mix until evenly incorporated.
- Cook the Fritters: Heat olive oil in a skillet, scoop the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden brown and cooked through.
- Serve: Drain excess oil on a paper towel–lined plate. Serve warm with your choice of dip.
Notes
- For crispier fritters, chill the mixture before frying.
- Bake fritters at 400°F (200°C) for 18–20 minutes for an alternative cooking method.
