Description

These Cheesy Chicken Fritters are a delicious combination of tender chicken, gooey cheeses, and flavorful seasonings, pan-fried to golden perfection. Perfect as a snack, appetizer, or even a main course!


Ingredients

For the Fritters:

  • 1 ½ pounds boneless, skinless chicken breasts, finely chopped
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • â…“ cup mayonnaise
  • ¼ cup all-purpose flour (or almond flour for low-carb)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil (for frying)


Instructions

  1. Prepare the Fritter Mixture: In a large bowl, combine the chicken, eggs, mozzarella, cheddar, mayonnaise, flour, green onions, garlic, paprika, salt, and black pepper. Mix until evenly incorporated.
  2. Cook the Fritters: Heat olive oil in a skillet, scoop the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden brown and cooked through.
  3. Serve: Drain excess oil on a paper towel–lined plate. Serve warm with your choice of dip.

Notes

  • For crispier fritters, chill the mixture before frying.
