Description

Spicy, cheesy biscuit-wrapped bites filled with creamy buffalo chicken, perfect for parties, snacks, or a quick meal.


Ingredients

  • 2 cups cooked, shredded chicken (rotisserie recommended)
  • 1/3 cup buffalo sauce (e.g., Frank’s RedHot)
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 can refrigerated biscuit dough (8 biscuits)
  • 2 tbsp butter, melted
  • 1/2 tsp garlic powder (optional)
  • 1 tsp dried parsley flakes (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix the shredded chicken, buffalo sauce, softened cream cheese, and cheddar cheese until well combined.
  3. Flatten each biscuit into a 3–4 inch disk. Place a heaping tablespoon of filling in the center of each.
  4. Fold and pinch the dough around the filling to seal, forming a ball. Place seam-side down on the baking sheet.
  5. Brush each bomb with melted butter and sprinkle with garlic powder and parsley if using.
  6. Bake for 15–18 minutes or until golden brown and puffed.
  7. Let cool for 5 minutes before serving. Serve with ranch or blue cheese dressing if desired.

Notes

  • To add extra heat, mix chopped jalapeños or a pinch of cayenne into the filling.
  • For a milder flavor, replace some buffalo sauce with ranch dressing.
  • You can substitute cheddar with mozzarella or pepper jack for variety.
  • Use crescent roll or puff pastry dough as alternatives for different textures.
