Ingredients
For the Casserole:
- 2 cups cooked white rice
- 2 cups cooked and shredded chicken breast
- 2 cups broccoli florets (steamed until tender)
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese (divided)
- 1 tablespoon olive oil or melted butter (for greasing)
Instructions
- Preheat the oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- Mix ingredients: In a large bowl, combine rice, chicken, broccoli, soup, sour cream, milk, seasonings, and 1 cup of cheddar.
- Bake: Spread mixture in the dish, top with remaining cheese, and bake for 25–30 minutes.
- Rest and serve: Let cool for 5 minutes before serving.
Notes
- You can use brown rice or quinoa instead of white rice.
- Frozen broccoli, if thawed and drained, can be a time-saving option.
