Description

This Cheesy Boursin Sloppy Joe Potato Skillet is a flavorful and satisfying one-pan meal that combines tender baby potatoes, seasoned ground beef, and a creamy Boursin cheese sauce topped with melted cheddar. A comforting and easy dish perfect for a weeknight dinner.


Ingredients

Potatoes:

  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil

Sloppy Joe Mixture:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 ounces Boursin garlic and herb cheese
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped for garnish


Instructions

  1. Cook Potatoes: In a large skillet, heat 1 tablespoon olive oil over medium heat. Add potatoes, season, and cook until golden brown and tender. Set aside.
  2. Prepare Sloppy Joe Mixture: In the same skillet, cook ground beef, onion, and bell pepper until beef is browned. Add garlic, tomato sauce, ketchup, Worcestershire sauce, brown sugar, smoked paprika, salt, and pepper. Simmer until thickened.
  3. Add Cheese: Stir in Boursin cheese until melted. Return potatoes to skillet, coat with sauce. Top with cheddar, cover, and melt.
  4. Garnish and Serve: Garnish with parsley and serve hot.
