Description

Cheesy Beef Taco Roll Ups are a delicious and easy appetizer perfect for parties or game day. These savory pinwheels are filled with seasoned ground beef, two types of cheese, and a hint of salsa, all rolled up in a flour tortilla and baked to gooey perfection. Serve with extra salsa or sour cream for dipping!


Ingredients

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • ½ cup water

Cheesy Filling:

  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese

Additional Ingredients:

  • 4 large flour tortillas
  • ¼ cup salsa (plus more for dipping)
  • 2 tablespoons chopped green onions (optional)
  • Nonstick cooking spray or oil for greasing

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C) and grease a baking sheet or line with parchment paper.
  2. Cook Beef: Brown ground beef in a skillet. Drain excess fat, add taco seasoning and water, simmer until thickened.
  3. Assemble: Spread salsa on tortillas, top with beef mixture, cheeses, and green onions. Roll tightly and place seam-side down on baking sheet.
  4. Bake: Bake for 12-15 minutes until golden and cheese melts.
