Ingredients

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 can (10 oz) diced tomatoes with green chilies (undrained)
  • 2 cups beef broth
  • 8 oz uncooked pasta (rotini, shells, or elbow)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream
  • Chopped cilantro or green onions for garnish (optional)


Instructions

  1. Cook Ground Beef: In a large skillet, heat olive oil and sauté onion until softened. Add garlic and ground beef, cook until browned. Drain excess fat.
  2. Combine Ingredients: Stir in taco seasoning, salt, pepper, diced tomatoes, and beef broth. Add pasta, bring to a boil, then simmer until pasta is tender.
