Ingredients
Chicken and Seasoning
- 4 boneless, skinless chicken breasts
- 1 packet fajita seasoning (about 1 ounce)
- 2 tablespoons olive oil
Vegetables
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
Cheese
- 1 cup shredded Mexican cheese blend
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken and vegetables.
- Season Chicken: In a large bowl, combine the fajita seasoning with the olive oil. Coat the chicken breasts evenly with this mixture, ensuring each piece is well seasoned.
- Assemble: Place the seasoned chicken breasts in a baking dish. Top the chicken with the sliced red and green bell peppers and sliced onion evenly spread over the top.
- Add Cheese: Sprinkle the shredded Mexican cheese blend generously over the chicken and vegetables, covering them well to create a cheesy topping.
- Bake: Bake uncovered in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
- Rest & Serve: Remove the baking dish from the oven and let it rest for 5 minutes before serving to allow the juices to redistribute and the flavors to meld.
Notes
- Use a meat thermometer to ensure the chicken reaches the safe internal temperature of 165°F (74°C).
- You can use a pre-mixed fajita seasoning or make your own blend with chili powder, cumin, garlic powder, paprika, and oregano.
- For a spicier version, add sliced jalapeños or a dash of cayenne pepper to the seasoning mix.
- Serve with warm tortillas, rice, or a side salad for a complete meal.
- Leftovers can be refrigerated for up to 3 days and reheated gently in the oven or microwave.
