Ingredients
Crust
- 1 1/2 cups graham cracker crumbs (or digestive biscuits)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Filling
- 2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2/3 cup sour cream
- 1/4 cup heavy cream
- 2 large eggs
Topping (optional)
- Fresh berries
- Chocolate drizzle
- Fruit compote
Instructions
- Preheat Oven: Preheat the oven to 325°F (163°C) to prepare for baking the tart.
- Make Crust Mixture: In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the crumbs are fully coated and the mixture is evenly combined.
- Form Crust: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch tart pan, using the back of a spoon or fingers to create an even crust layer.
- Bake Crust: Bake the crust for 8-10 minutes until golden brown. Remove from the oven and allow it to cool while preparing the filling.
- Prepare Filling Base: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, mixing well until incorporated.
- Add Creams and Eggs: Mix in the sour cream and heavy cream until smooth. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next to maintain a smooth batter.
- Fill Tart: Pour the filling into the cooled crust and smooth the top evenly with a spatula.
- Bake Tart: Bake for 45-50 minutes until the edges are set and the center is slightly jiggly; it will firm up during cooling.
- Cool and Chill: Allow the tart to cool completely in the pan on a wire rack, then refrigerate for at least 4 hours or overnight to set properly and develop the best texture.
- Serve: Before serving, decorate the cheesecake tart with fresh berries, a drizzle of chocolate, or fruit compote as desired for added flavor and presentation.
Notes
- Ensure the cream cheese is softened to room temperature to achieve a smooth filling.
- Do not overbake the tart; the center should remain slightly jiggly to prevent cracks and dryness.
- Refrigeration overnight is recommended for the best texture and flavor.
- You can substitute graham cracker crumbs with digestive biscuits if preferred.
- Optional toppings add flavor variety and a decorative touch.
