Ingredients
Muffin Batter:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 2/3 cup buttermilk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup hot water
- 1/2 cup mini chocolate chips
Cheesecake Filling:
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F: Line a 12-cup muffin tin with paper liners.
- Prepare Muffin Batter: Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl. In a large bowl, whisk sugar, buttermilk, oil, eggs, and vanilla until smooth. Mix in dry ingredients, then stir in hot water. Fold in chocolate chips.
- Make Cheesecake Filling: Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Assemble Muffins: Fill each muffin cup halfway with chocolate batter, add 1 tablespoon of cheesecake filling, then cover with more chocolate batter.
- Bake: Bake for 18-22 minutes until set. Cool and serve warm or at room temperature.
