Description

A hearty and comforting casserole that combines all the flavors of a classic cheeseburger—savory beef, melted cheddar, tangy pickles—topped with crispy golden French fries for the ultimate weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1/2 cup chopped dill pickles
  • 2 cups shredded sharp cheddar cheese
  • 1 (20 oz) bag frozen French fries (shoestring style recommended)
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, shredded lettuce, crumbled bacon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook ground beef with chopped onion and garlic until browned. Season with salt and pepper. Drain excess grease.
  3. Stir in ketchup, mustard, and chopped pickles. Let simmer for 2–3 minutes.
  4. Spread beef mixture evenly in a 9×13-inch baking dish. Sprinkle 1½ cups of shredded cheddar cheese over the beef.
  5. Top with an even layer of frozen French fries.
  6. Bake uncovered for 25–30 minutes, until fries are golden and crispy and cheese is bubbling.
  7. Sprinkle remaining ½ cup cheese over the top in the last 5 minutes of baking if desired.
  8. Let rest 5 minutes before serving. Top with optional diced tomatoes, lettuce, or crumbled bacon if using.

Notes

  • Use ground turkey or chicken as a leaner alternative to beef.
  • Layer some cheese beneath the fries for extra meltiness.
  • Serve with dipping sauces like ranch, ketchup, or burger sauce.
  • Great for make-ahead: assemble without fries and refrigerate; add fries just before baking.
