Ingredients
Main Ingredients
- 950g cooked spaghetti squash (about 1 large spaghetti squash)
- 1 tablespoon olive oil
- ½ yellow onion, diced
- 1 lb ground turkey (93/7 lean) – can substitute with ground beef
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cloves garlic, minced
- ½ cup ketchup
- ¼ cup mustard
- ¼ cup nonfat plain Greek yogurt
- ½ cup chopped pickles
- 3 large eggs
- 1 cup shredded lite cheddar cheese, divided
Instructions
- Preheat and Prepare Squash: Preheat your oven to 400°F (200°C) and grease a 9×9 inch baking dish. Cook the spaghetti squash using your preferred method such as roasting or microwaving until tender, then shred the flesh with a fork to create spaghetti-like strands.
- Cook Ground Turkey Mixture: Heat olive oil in a skillet over medium-high heat. Sauté the diced yellow onion until softened, then add the ground turkey along with salt, black pepper, and minced garlic. Cook until the turkey is browned and crumbled thoroughly.
- Combine Ingredients: In a large bowl, mix the cooked spaghetti squash with the browned ground turkey mixture. Add ketchup, mustard, nonfat plain Greek yogurt, and chopped pickles and stir to combine all ingredients evenly.
- Prepare Egg and Cheese Mixture: In a separate bowl, whisk the eggs until smooth. Add half of the shredded lite cheddar cheese to the spaghetti squash mixture, then pour in the whisked eggs and stir well to incorporate everything thoroughly.
- Assemble and Bake: Transfer the combined casserole mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly on top. Bake in the preheated oven for 1 hour, or until the casserole is set and the cheese is golden brown.
- Cool and Serve: Remove the casserole from the oven and let it cool for 15 minutes before serving to allow it to set further and enhance the flavors.
