Description

Ingredients

Cheese Mixture

  • 1 ½ cups freshly grated Monterey Jack cheese
  • 1 ½ cups freshly grated mild cheddar cheese

Other Ingredients

  • Up to 4 tbsp avocado or canola oil, separated
  • 8 flour tortillas


Instructions

  1. Prepare Cheese: In a small mixing bowl, combine the grated Monterey Jack and cheddar cheeses. Set aside.
  2. Heat Skillet: Warm a skillet over medium-low heat and add a light drizzle of oil to prevent sticking.
  3. Assemble and Cook Quesadilla: Place one tortilla in the pan and evenly scatter ¼ cup of the cheese mixture over half of the tortilla. Allow the cheese to begin melting and watch as the tortilla bubbles up, about 1 minute.
  4. Fold and Melt Cheese: Fold the bare half of the tortilla over the cheese, creating a half-moon shape. Press down gently with a spatula until the cheese fully melts and the tortilla is golden, roughly 1 more minute.
  5. Repeat: Continue cooking the remaining tortillas in the same manner, adding more oil to the pan as needed to prevent sticking.
  6. Serve: Cut the quesadillas into halves or quarters and serve immediately while hot and melty.
