Ingredients
Cauliflower Mixture:
- 2 cups cauliflower florets finely chopped
- 1 tbsp olive oil
- 1 clove garlic minced
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tsp dried thyme or Italian seasoning
- ½ cup shredded sharp cheddar cheese
- ¼ cup grated Parmesan cheese
Additional Ingredients:
- 4 slices crusty bread (such as sourdough or ciabatta)
- 1 tbsp butter (optional)
- fresh parsley or chives for garnish (optional)
Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Sauté Cauliflower: In a skillet, sauté the cauliflower in olive oil until softened and golden. Add garlic, salt, pepper, and thyme. Let cool slightly.
- Prepare Cheese Mixture: Combine cheddar and Parmesan cheese with the cauliflower mixture.
- Assemble Toasts: Toast bread slices, then spread with butter. Top each slice with the cauliflower cheese mixture.
- Bake: Bake the toasts for 8–10 minutes until cheese is melted and bubbling.
- Garnish and Serve: Garnish with fresh herbs if desired and serve warm.
Notes
- For extra richness, consider adding ricotta or cream cheese under the cauliflower mixture.
- This recipe can also be served as an open-faced sandwich with a poached egg.
