Description

Cauliflower Cheese Toasts are a delicious and satisfying snack or light meal that combines the earthy flavor of cauliflower with the richness of two types of cheese. These toasts are perfect for a quick bite or a flavorful appetizer.


Ingredients

Cauliflower Mixture:

  • 2 cups cauliflower florets finely chopped
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried thyme or Italian seasoning
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese

Additional Ingredients:

  • 4 slices crusty bread (such as sourdough or ciabatta)
  • 1 tbsp butter (optional)
  • fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Sauté Cauliflower: In a skillet, sauté the cauliflower in olive oil until softened and golden. Add garlic, salt, pepper, and thyme. Let cool slightly.
  3. Prepare Cheese Mixture: Combine cheddar and Parmesan cheese with the cauliflower mixture.
  4. Assemble Toasts: Toast bread slices, then spread with butter. Top each slice with the cauliflower cheese mixture.
  5. Bake: Bake the toasts for 8–10 minutes until cheese is melted and bubbling.
  6. Garnish and Serve: Garnish with fresh herbs if desired and serve warm.

  • For extra richness, consider adding ricotta or cream cheese under the cauliflower mixture.
