Description

Cattle Drive Casserole is a hearty Tex-Mex inspired dish featuring layers of seasoned ground beef, beans, cheesy sour cream mixture, and a golden cornbread topping. This comforting casserole is perfect for a cozy family dinner or potluck gathering.


Ingredients

For the Beef Layer:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1 (8-ounce) can tomato sauce
  • 1 (15-ounce) can ranch-style or chili beans
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

For the Cheese Layer:

  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 teaspoon onion powder

For the Cornbread Topping:

  • 1 (8.5-ounce) box Jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Preheat Oven and Prepare Dish: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook Beef: In a skillet, brown ground beef and onion. Add garlic, tomatoes, tomato sauce, beans, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  3. Layer Ingredients: Spread beef mixture in the baking dish. Mix sour cream, mayonnaise, onion powder, and half of the cheese. Spread over beef. Combine cornbread mix, egg, and milk; pour over the top. Sprinkle remaining cheese.
  4. Bake: Bake for 35–40 minutes until cornbread is golden and cooked through. Let sit for 5 minutes before serving.

Notes

  • Substitute ground turkey or black beans for a lighter or vegetarian version.
  • Add diced jalapeños for extra heat.
  • Leftovers reheat well.
