Cattle Drive Casserole is a hearty Tex-Mex inspired dish featuring layers of seasoned ground beef, beans, cheesy sour cream mixture, and a golden cornbread topping. This comforting casserole is perfect for a cozy family dinner or potluck gathering.
Ingredients
For the Beef Layer:
- 1 pound ground beef
- 1 small onion, diced
- 1 clove garlic, minced
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
- 1 (8-ounce) can tomato sauce
- 1 (15-ounce) can ranch-style or chili beans
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
For the Cheese Layer:
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/4 cup mayonnaise
- 1/2 teaspoon onion powder
For the Cornbread Topping:
- 1 (8.5-ounce) box Jiffy corn muffin mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat Oven and Prepare Dish: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook Beef: In a skillet, brown ground beef and onion. Add garlic, tomatoes, tomato sauce, beans, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
- Layer Ingredients: Spread beef mixture in the baking dish. Mix sour cream, mayonnaise, onion powder, and half of the cheese. Spread over beef. Combine cornbread mix, egg, and milk; pour over the top. Sprinkle remaining cheese.
- Bake: Bake for 35–40 minutes until cornbread is golden and cooked through. Let sit for 5 minutes before serving.
Notes
- Substitute ground turkey or black beans for a lighter or vegetarian version.
- Add diced jalapeños for extra heat.
- Leftovers reheat well.
