Description

Cattle Drive Casserole is a hearty Southwestern-inspired dish layering seasoned beef, beans, and veggies beneath a fluffy, cheesy biscuit topping—perfect comfort food for any occasion.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can Rotel tomatoes with green chilies
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 4 oz cream cheese, softened
  • 1/4 cup milk
  • 1 cup Bisquick or other baking mix
  • 1 1/2 cups shredded cheddar cheese, divided


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium-high heat, cook ground beef until browned. Add onion and green pepper, cooking until softened. Drain excess fat.
  3. Add black beans, corn, Rotel, and taco seasoning. Stir to combine and let simmer for 5 minutes.
  4. Spread meat mixture into a 9×13-inch casserole dish in an even layer.
  5. In a bowl, whisk together sour cream, cream cheese, milk, and Bisquick until smooth. Fold in 1 cup of shredded cheddar cheese.
  6. Spread biscuit mixture evenly over meat. Top with remaining 1/2 cup cheddar cheese.
  7. Bake for 30–35 minutes or until topping is golden and casserole is bubbling. Let cool slightly before serving.

Notes

  • Top with green onions, cilantro, or jalapeños for extra flavor and color.
  • Serve with a green salad, roasted vegetables, or tortillas.
  • Make in individual ramekins for party servings or store as meal prep portions.
  • To freeze: cool fully, wrap in foil, and freeze for up to 3 months.
