Pizza Dough and Crust
- 12 oz. pizza dough (at room temperature)
- 1 tablespoon olive oil
- 2 tablespoons parmesan cheese (grated)

- 1 ¾ cups mozzarella cheese (whole milk/low moisture)
- 14 slices pepperoni

Instructions
- Preheat oven: Preheat your oven to 475°F, allowing it to heat for at least 30 minutes. The high temperature is crucial for a crispy cast iron crust.
- Prepare dough: If using more than 12 oz. of dough, remove the extra. Roll the 12 oz. dough into a 14-inch circle on a lightly floured surface.
- Prepare skillet: Spray a 12-inch cast iron skillet with nonstick cooking spray. Place the rolled dough into the skillet and press the dough halfway up the sides, then roll downward to form a thick crust edge.
- Brush and season crust: Using a pastry brush, coat the dough surface with 1 tbsp. olive oil. Sprinkle parmesan cheese and dried oregano evenly on top. Use a fork to poke holes across the dough to vent air bubbles.
- First bake: Place the skillet on the lower oven rack and bake for 5 minutes. Remove the skillet and use a paper towel to blot away excess oil and press the crust down flat.
- Add toppings: Spread ½ cup marinara sauce over the crust, then layer with 1¾ cups mozzarella cheese, pepperoni slices, and the sliced onions and peppers.
- Second bake: Return the skillet to the lower rack and bake for 10 more minutes to melt the cheese and cook the toppings properly.
