Description

This Cast Iron Skillet Pizza recipe delivers a perfectly crispy crust and melty mozzarella cheese by baking the pizza in a hot cast iron skillet. With a homemade-style dough, a blend of parmesan and oregano for extra flavor, and topped with marinara sauce, pepperoni, onions, and peppers, this pizza is easy to prepare and irresistibly delicious. Perfect for a quick weeknight dinner or a casual gathering.

Ingredients

Pizza Dough and Crust

  • 12 oz. pizza dough (at room temperature)
  • 1 tablespoon olive oil
  • 2 tablespoons parmesan cheese (grated)
  • ¼ teaspoon dried oregano

Toppings

  • ½ cup marinara sauce
  • 1 ¾ cups mozzarella cheese (whole milk/low moisture)
  • 14 slices pepperoni
  • ¼ cup sliced onions and peppers

Finishing

  • 1 tablespoon butter (melted)
  • Nonstick cooking spray (for the skillet)

Instructions

  1. Preheat oven: Preheat your oven to 475°F, allowing it to heat for at least 30 minutes. The high temperature is crucial for a crispy cast iron crust.
  2. Prepare dough: If using more than 12 oz. of dough, remove the extra. Roll the 12 oz. dough into a 14-inch circle on a lightly floured surface.
  3. Prepare skillet: Spray a 12-inch cast iron skillet with nonstick cooking spray. Place the rolled dough into the skillet and press the dough halfway up the sides, then roll downward to form a thick crust edge.
  4. Brush and season crust: Using a pastry brush, coat the dough surface with 1 tbsp. olive oil. Sprinkle parmesan cheese and dried oregano evenly on top. Use a fork to poke holes across the dough to vent air bubbles.
  5. First bake: Place the skillet on the lower oven rack and bake for 5 minutes. Remove the skillet and use a paper towel to blot away excess oil and press the crust down flat.
  6. Add toppings: Spread ½ cup marinara sauce over the crust, then layer with 1¾ cups mozzarella cheese, pepperoni slices, and the sliced onions and peppers.
  7. Second bake: Return the skillet to the lower rack and bake for 10 more minutes to melt the cheese and cook the toppings properly.
  8. Finish crust and broil: Remove from oven, brush the crust edges with melted butter, transfer the skillet to the upper oven rack, and bake for 3 more minutes. Finally, broil at 425°F for 1 minute while closely watching to achieve a golden-brown top.
  9. Rest and serve: Let the pizza rest in the skillet for 3-5 minutes. Tilt the skillet and use a spatula to slide the pizza onto a cutting board. Slice and enjoy!

Notes

  • Allow the oven to fully preheat to 475°F to get the best crust texture.
  • If using extra pizza dough, remove the excess to avoid overly thick crust.
  • Using a cast iron skillet helps achieve a crispy bottom and evenly cooked pizza.
  • Broiling at the end creates a beautifully browned and bubbly cheese topping.
  • Be cautious when broiling; the pizza can burn quickly within a minute.
  • Letting the pizza rest helps the cheese set and makes slicing easier.
