Ingredients
Rolled Oat Mixture:
- 1 cup rolled oats
- 1/2 cup finely grated carrot (about 1 medium)
- 1/2 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- pinch of salt
Add-ins (Optional):
- 1/4 cup shredded unsweetened coconut
- 2 tablespoons mini chocolate chips or chopped nuts
Instructions
- Mix Ingredients: In a medium bowl, combine the oats, grated carrot, almond butter, honey, ground flaxseed, cinnamon, nutmeg, vanilla extract, and salt. Add coconut and chocolate chips or nuts if using. Stir until fully mixed.
- Chill Mixture: Cover and refrigerate for 15–20 minutes to firm up.
- Form Balls: Once chilled, roll into 1-inch balls and place on a parchment-lined tray.
- Storage: Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.

- For added protein, mix in a scoop of your favorite vanilla or unflavored protein powder.
- Swap almond butter with sunflower seed butter for a nut-free version.
