Description

Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Prepare wet mixture: In a large bowl, whisk the eggs, oil, brown sugar, granulated sugar, and vanilla until smooth. Stir in the grated carrots and pineapple.
  4. Combine ingredients: Add the dry ingredients to the wet mixture and stir until just combined. Fold in the nuts, if using.
  5. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and slice: Cool completely before slicing into bars.
