- 1 cup grated zucchini (squeezed dry)
- 1 cup grated carrot
- 1 cup grated apple (peeled and cored)
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup applesauce (unsweetened)
- 2/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together eggs, oil, applesauce, brown sugar, and vanilla. Stir in the grated zucchini, carrot, and apple.
- In a separate bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added sweetness, stir in 1/4 cup of raisins or dried cranberries.
- This bread freezes well—wrap tightly and freeze for up to 3 months.
