A refreshing and colorful Carrot Apple Salad that combines the sweetness of apples and raisins with the crunch of carrots, all tossed in a tangy yogurt dressing. This easy no-cook salad is perfect for a quick, healthy side dish or light meal.
Ingredients
Salad:
- 2 cups shredded carrots
 - 2 medium apples, cored and chopped or julienned
 - 1/4 cup raisins
 
Dressing:
- 2 tablespoons lemon juice
 - 1 tablespoon honey or maple syrup
 - 2 tablespoons plain Greek yogurt or mayonnaise
 - 1/4 teaspoon cinnamon (optional)
 - pinch of salt
 
Instructions
- Prepare Salad: In a large bowl, combine shredded carrots, chopped apples, and raisins.
 - Make Dressing: In a small bowl, whisk together lemon juice, honey, Greek yogurt (or mayonnaise), cinnamon, and a pinch of salt until smooth.
 - Toss: Pour the dressing over the carrot-apple mixture and toss until well coated.
 - Chill: Cover and refrigerate for at least 30 minutes before serving for best flavor.
 
Notes
- For a dairy-free version, use a plant-based yogurt or skip the yogurt and use only lemon juice and honey.
 - Toast walnuts or sunflower seeds make a great crunchy addition.
