Description

A refreshing and colorful Carrot Apple Salad that combines the sweetness of apples and raisins with the crunch of carrots, all tossed in a tangy yogurt dressing. This easy no-cook salad is perfect for a quick, healthy side dish or light meal.

Ingredients

Salad:

  • 2 cups shredded carrots
  • 2 medium apples, cored and chopped or julienned
  • 1/4 cup raisins

Dressing:

  • 2 tablespoons lemon juice
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons plain Greek yogurt or mayonnaise
  • 1/4 teaspoon cinnamon (optional)
  • pinch of salt

Instructions

  1. Prepare Salad: In a large bowl, combine shredded carrots, chopped apples, and raisins.
  2. Make Dressing: In a small bowl, whisk together lemon juice, honey, Greek yogurt (or mayonnaise), cinnamon, and a pinch of salt until smooth.
  3. Toss: Pour the dressing over the carrot-apple mixture and toss until well coated.
  4. Chill: Cover and refrigerate for at least 30 minutes before serving for best flavor.

Notes

  • For a dairy-free version, use a plant-based yogurt or skip the yogurt and use only lemon juice and honey.
  • Toast walnuts or sunflower seeds make a great crunchy addition.
