Description

These Caramelized Onion & Gruyère Stuffed Mushrooms are a delightful appetizer featuring savory mushrooms filled with a rich, cheesy onion mixture. Perfect for entertaining or as a flavorful snack!


Ingredients

Mushrooms:

  • 24 large white or cremini mushrooms, stems removed and finely chopped
  • 2 tbsp olive oil

Filling:

  • 1 tbsp butter
  • 1 large yellow onion thinly sliced
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp fresh thyme leaves
  • ¾ cup grated Gruyère cheese
  • ¼ cup panko breadcrumbs
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean and prep mushrooms: Clean the mushrooms and remove stems, setting aside for the filling.
  3. Caramelize onions: Cook onions slowly with olive oil and butter until golden and caramelized.
  4. Prepare filling: Add mushroom stems, garlic, salt, pepper, and thyme. Cool slightly and mix in cheese and breadcrumbs.
  5. Stuff mushrooms: Fill each mushroom cap with the mixture and bake.
  6. Bake: Bake until mushrooms are tender and golden on top.
  7. Garnish and serve: Garnish with parsley if desired and serve warm.

Notes

  • For a richer flavor, add a splash of white wine to the onions while caramelizing.
  • You can prepare the filling a day ahead and refrigerate until ready to bake.
