These Caramelized Onion & Gruyère Stuffed Mushrooms are a delightful appetizer featuring savory mushrooms filled with a rich, cheesy onion mixture. Perfect for entertaining or as a flavorful snack!
Ingredients
Mushrooms:
- 24 large white or cremini mushrooms, stems removed and finely chopped
- 2 tbsp olive oil
Filling:
- 1 tbsp butter
- 1 large yellow onion thinly sliced
- 2 cloves garlic minced
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp fresh thyme leaves
- ¾ cup grated Gruyère cheese
- ¼ cup panko breadcrumbs
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Clean and prep mushrooms: Clean the mushrooms and remove stems, setting aside for the filling.
- Caramelize onions: Cook onions slowly with olive oil and butter until golden and caramelized.
- Prepare filling: Add mushroom stems, garlic, salt, pepper, and thyme. Cool slightly and mix in cheese and breadcrumbs.
- Stuff mushrooms: Fill each mushroom cap with the mixture and bake.
- Bake: Bake until mushrooms are tender and golden on top.
- Garnish and serve: Garnish with parsley if desired and serve warm.
Notes
- For a richer flavor, add a splash of white wine to the onions while caramelizing.
- You can prepare the filling a day ahead and refrigerate until ready to bake.
