Description

Delight in this luscious Caramel Crunch Cake, featuring a moist yellow cake soaked with sweetened condensed milk and caramel sauce, topped with whipped cream, crunchy toffee bits, and pecans for a perfect balance of creamy and crunchy textures. This American classic poke cake is easy to make and ideal for holiday celebrations or any special occasion.

Ingredients

Cake

  • 1 box yellow cake mix (plus ingredients listed on the box: eggs, oil, and water)

Toppings and Filling

  • 1 cup toffee bits or crushed caramel candy
  • 1/2 cup chopped pecans (optional)
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup caramel sauce (plus extra for drizzling)
  • 1 tub (8 oz) whipped topping (thawed)
  • 1/2 cup crushed toffee or caramel corn for topping

Instructions

  1. Prepare and Bake the Cake: Follow the yellow cake mix package instructions using the required eggs, oil, and water. Pour the batter into a greased 9×13-inch pan and bake as directed, usually around 30 minutes or until a toothpick inserted comes out clean.
  2. Cool and Poke Holes: Remove the cake from the oven and let it cool for about 10 minutes. Use the handle of a wooden spoon to poke holes evenly all over the warm cake, allowing the liquids to soak through.
  3. Soak with Sweetened Condensed Milk: Pour the entire can of sweetened condensed milk evenly over the cake, letting it seep into the holes for moisture and sweetness.
  4. Drizzle Caramel Sauce: Evenly drizzle 1/2 cup of caramel sauce over the cake, allowing it to permeate the cake and enhance caramel flavor.
  5. Cool Completely: Let the cake cool fully at room temperature to set and absorb the liquids.
  6. Apply Whipped Topping: Spread the thawed whipped topping evenly on the cake surface to create a creamy layer.
  7. Add Crunchy Toppings: Sprinkle the toffee bits or crushed caramel candy along with chopped pecans on top of the whipped topping.
  8. Finish with Caramel and Crushed Toffee: Drizzle additional caramel sauce over the top and garnish with a handful of crushed toffee or caramel corn for extra crunch.
  9. Chill Before Serving: Refrigerate the cake for at least 1 hour to allow flavors to meld and serve chilled.

Notes

  • For richer caramel flavor, use homemade caramel sauce instead of store-bought.
  • Substitute crushed pretzels or honeycomb candy for a different texture in the topping.
  • Best served chilled for optimal flavor and texture.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
