Description

Caprese Roasted Asparagus is a delightful side dish featuring tender asparagus roasted to perfection and topped with cherry tomatoes, fresh mozzarella pearls, balsamic glaze, and basil. This dish is bursting with flavor and makes a vibrant addition to any meal.


Ingredients

Asparagus:

  • 1 bunch fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Additional Toppings:

  • 1 cup cherry tomatoes, halved
  • 4 oz fresh mozzarella pearls
  • 2 tablespoons balsamic glaze
  • 2 tablespoons chopped fresh basil


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Prepare Asparagus: Spread trimmed asparagus on a baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to coat.
  3. Roast: Roast in the oven for 12 to 15 minutes until tender and slightly golden.
  4. Add Toppings: Remove from the oven and top with cherry tomatoes and mozzarella pearls. Return to the oven for 3 to 5 minutes until the mozzarella softens.
  5. Finish and Serve: Drizzle with balsamic glaze and sprinkle with chopped basil before serving.
