Description

A fresh and flavorful Caprese Roasted Asparagus dish combining tender roasted asparagus, juicy cherry tomatoes, melted mozzarella cheese, fresh basil, and a drizzle of balsamic glaze. Perfect as a quick and elegant side dish ready in just 20 minutes.

  • 1 lb asparagus, trimmed
  • 2 cups cherry tomatoes, halved

  • 2 tbsp olive oil, divided (for drizzling)
  • Kosher salt and pepper, to taste
  • 2 cups shredded mozzarella cheese
  • Fresh chopped basil, for garnish
  • Bottled balsamic glaze, for garnish


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with foil. Lightly spray the foil with non-stick cooking spray to prevent sticking.
  2. Arrange the vegetables: Place the trimmed asparagus in a row on one side of the baking sheet and the halved cherry tomatoes on the other side, keeping them separate.
  3. Season and oil: Drizzle 1 tablespoon of olive oil over the asparagus and season with kosher salt and pepper. Repeat the same oiling and seasoning process with the cherry tomatoes.
  4. Roast the vegetables: Place the baking sheet into the oven and roast the vegetables for 10 minutes, allowing them to soften and begin caramelizing.
  5. Add the cheese: Remove the baking sheet from the oven with about 5 minutes remaining. Sprinkle the shredded mozzarella evenly over the asparagus and return to the oven until the cheese melts and turns golden, about 5 minutes more.
  6. Serve and garnish: Transfer the roasted asparagus to a serving plate, top with the roasted cherry tomatoes, garnish with fresh chopped basil, and finish with a drizzle of balsamic glaze. Serve warm.
