Description
A simple and delicious Caprese Frittata featuring fresh basil, creamy mozzarella, and sweet cherry tomatoes, enhanced with a drizzle of balsamic vinegar. Perfect for a quick breakfast or light lunch, this frittata combines Italian flavors with an easy stovetop and broiler cooking method.
Ingredients
Egg Mixture
- 4 large eggs
- 2 tablespoons milk (or heavy cream/coconut milk)
- Fresh basil, chopped, about 2 tablespoons
- Salt, to taste
- Black pepper, to taste
Additional Ingredients
- 1 tablespoon olive oil
- 1/2 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes
- 1 teaspoon balsamic vinegar
Instructions
- Prepare Egg Mixture: In a bowl, whisk together 4 large eggs, 2 tablespoons of milk (or heavy cream/coconut milk), freshly chopped basil, salt, and black pepper until well combined and slightly frothy.
- Cook Egg Base: Heat 1 tablespoon of olive oil in a skillet over medium heat. Pour in the egg mixture and cook undisturbed for about 2 minutes until the edges begin to set but the center is still slightly runny.
- Add Cheese and Broil: Sprinkle 1/2 cup shredded mozzarella evenly over the eggs. Transfer the skillet to the broiler and broil for 2-3 minutes until the eggs are fully set and the cheese is melted and bubbly. Keep a close eye to avoid burning.
- Add Tomatoes and Finish: Remove the frittata from the broiler. Arrange 1/2 cup blistered cherry tomatoes on top, drizzle with 1 teaspoon balsamic vinegar, and serve immediately while warm.
Notes
- You can substitute milk with heavy cream or coconut milk for a richer texture.
- Ensure your skillet is oven-safe before placing under the broiler.
- Fresh basil can be adjusted to taste or replaced with fresh oregano for a different flavor.
- Use cherry tomatoes that are blistered by quickly sautéing or roasting them beforehand for best taste.
- For a dairy-free option, omit mozzarella or use a plant-based cheese alternative.
