Ingredients

Egg Mixture

  • 4 large eggs
  • 2 tablespoons milk (or heavy cream/coconut milk)
  • Fresh basil, chopped, about 2 tablespoons
  • Salt, to taste
  • Black pepper, to taste

Additional Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes
  • 1 teaspoon balsamic vinegar


Instructions

  1. Prepare Egg Mixture: In a bowl, whisk together 4 large eggs, 2 tablespoons of milk (or heavy cream/coconut milk), freshly chopped basil, salt, and black pepper until well combined and slightly frothy.
  2. Cook Egg Base: Heat 1 tablespoon of olive oil in a skillet over medium heat. Pour in the egg mixture and cook undisturbed for about 2 minutes until the edges begin to set but the center is still slightly runny.
  3. Add Cheese and Broil: Sprinkle 1/2 cup shredded mozzarella evenly over the eggs. Transfer the skillet to the broiler and broil for 2-3 minutes until the eggs are fully set and the cheese is melted and bubbly. Keep a close eye to avoid burning.
  4. Add Tomatoes and Finish: Remove the frittata from the broiler. Arrange 1/2 cup blistered cherry tomatoes on top, drizzle with 1 teaspoon balsamic vinegar, and serve immediately while warm.
