Description

These Campfire Dinner Meatloaf Foil Packets are a delicious and convenient way to enjoy a classic meatloaf meal while camping or grilling outdoors. The individual foil packets lock in all the flavors for a moist and savory dish that’s easy to make and even easier to clean up.


Ingredients

For the Meatloaf:

  • lbs ground beef (85% lean)
  • ½ cup breadcrumbs
  • 1 large egg
  • ⅓ cup milk
  • ¼ cup ketchup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese

For the Vegetables:

  • 2 cups baby potatoes, quartered
  • 2 cups baby carrots, halved lengthwise
  • 2 tablespoons olive oil
  • Additional salt and pepper for seasoning vegetables

For Garnish:

  • Chopped parsley (optional)
  • Heavy-duty aluminum foil

Instructions

  1. Prepare the Meatloaf: In a large bowl, mix ground beef, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and cheddar cheese. Shape into mini loaves.
  2. Prepare the Vegetables: Toss baby potatoes and carrots with olive oil, salt, and pepper in a separate bowl.
  3. Assemble Foil Packets: Place a meatloaf and portion of vegetables on each foil sheet. Seal tightly.
  4. Cook: Grill or cook over a campfire for 30–35 minutes, turning once, until meat is cooked and vegetables are tender.
  5. Serve: Open packets, garnish with parsley, and enjoy hot.
