Ingredients
Cake Batter
- 1 box (15.25 oz) yellow cake mix
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
Streusel Topping
- 1/2 cup brown sugar, packed
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, softened
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan to prevent the cake from sticking.
- Make the Cake Batter: In a large bowl, combine the yellow cake mix, sour cream, vegetable oil, eggs, and vanilla extract. Beat the mixture with a hand mixer or whisk until smooth and fully combined, which should take about 2 minutes.
- Make the Streusel Topping: In a separate small bowl, mix together the brown sugar, all-purpose flour, and ground cinnamon. Add the softened unsalted butter and use a fork or your fingers to blend everything until crumbly and well mixed.
- Layer the Cake and Streusel: Pour half of the cake batter into the prepared baking pan and spread it evenly with a spatula. Then sprinkle half of the streusel mixture evenly over the batter.
- Add Remaining Layers: Pour the remaining cake batter evenly over the streusel layer. Lastly, sprinkle the rest of the streusel topping over the top of the batter.
- Bake: Place the pan in the preheated oven and bake for 35 to 40 minutes. Test doneness by inserting a toothpick into the center; it should come out clean. If the top browns too quickly while baking, cover it loosely with aluminum foil to prevent burning.
- Cool and Serve: Let the coffee cake cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool slightly. Slice and serve it warm or at room temperature for best flavor and texture.
Notes
- Use a 9-inch baking pan—either round or square—for even baking.
- Adjust baking time slightly if using a different pan size; thinner cake layers will bake faster.
- Butter should be softened (not melted) for the streusel topping to achieve the crumbly texture.
- Letting the cake cool slightly before slicing helps maintain clean slices.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
