Description

This easy Cake Mix Coffee Cake is a perfect treat combining the convenience of a boxed yellow cake mix with a delicious cinnamon brown sugar streusel topping. Moist and tender with a crumbly topping, it’s an ideal sweet snack for coffee breaks or breakfast gatherings.


Ingredients

Cake Batter

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Streusel Topping

  • 1/2 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, softened


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan to prevent the cake from sticking.
  2. Make the Cake Batter: In a large bowl, combine the yellow cake mix, sour cream, vegetable oil, eggs, and vanilla extract. Use a hand mixer or whisk to beat the mixture for about 2 minutes until smooth and fully combined.
  3. Make the Streusel Topping: In a separate small bowl, mix together the brown sugar, all-purpose flour, and ground cinnamon. Add the softened unsalted butter, then use a fork or your fingers to mix until the mixture becomes crumbly.
  4. Layer the Cake and Streusel: Pour half of the cake batter into the prepared baking pan and smooth it evenly. Sprinkle half of the streusel topping over the batter.
  5. Add Remaining Batter and Topping: Pour the remaining cake batter over the streusel layer, spreading it out evenly. Then sprinkle the remaining streusel topping evenly over the cake batter.
  6. Bake: Place the pan in the preheated oven and bake for 35 to 40 minutes. To check doneness, insert a toothpick into the center; it should come out clean. If the top begins to brown too quickly, cover the pan loosely with aluminum foil halfway through baking.
  7. Cool and Serve: Let the coffee cake cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool slightly. Slice and serve warm or at room temperature for the best flavor.
