Ingredients
Sweet Potato Rounds:
- 1 large sweet potato (peeled and cut into 1/4-inch rounds)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Cajun Shrimp:
- 1/2 lb shrimp (peeled and deveined)
- 1 tbsp Cajun seasoning
- 1 tbsp butter
Yogurt Sauce:
- 2 tbsp plain Greek yogurt or sour cream
- 1 tsp lemon juice
- 1/4 tsp garlic powder
Garnish:
- Chopped fresh parsley or green onion
Instructions
- Preheat oven and prepare sweet potatoes: Preheat oven to 400°F and line a baking sheet with parchment paper. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange on the baking sheet and roast for 20–25 minutes until tender and slightly crisp, flipping halfway through.
- Cook Cajun shrimp: Toss shrimp with Cajun seasoning. In a skillet, heat butter over medium-high heat and cook shrimp for 2–3 minutes per side until opaque and cooked through.
- Prepare yogurt sauce: In a small bowl, mix Greek yogurt (or sour cream) with lemon juice and garlic powder.
- Assemble: Top each sweet potato round with a shrimp, a dollop of the yogurt sauce, and a sprinkle of parsley or green onion.
