Grits

Shrimp

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 pound medium shrimp, peeled and deveined
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon lime juice
  • Chopped parsley or sliced green onions or chives, for garnish


Instructions

  1. Prepare the grits base: In a saucepan over medium heat, combine the milk, water, and kosher salt. Bring this mixture to a boil.
  2. Add grits and seasonings: Stir in the grits, freshly ground black pepper, and garlic powder. Whisk continuously until the mixture is smooth, lump-free, and begins to thicken.
  3. Simmer the grits: Lower the heat to medium-low, cover the saucepan, and cook the grits for 10 to 12 minutes, stirring occasionally to prevent sticking and ensure even cooking. Cook until the grits are tender and the liquid is absorbed.
  4. Finish the grits: Remove the saucepan from heat and stir in the butter and grated cheddar cheese until fully melted and incorporated. Cover and keep warm.
  5. Cook the shrimp: Heat a large skillet over medium-high heat and melt the butter. Add the minced garlic and cook briefly until fragrant. Add the shrimp in a single layer and cook for about 2 minutes on each side or until the shrimp turn pink and are cooked through.
