Description

A flavorful and spicy Cajun chicken dish sautéed with colorful bell peppers. Perfect for a quick weeknight dinner with a Southern twist.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tablespoon Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the sliced chicken breasts with Cajun seasoning, salt, and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  4. In the same skillet, add a little more oil if needed, then sauté the garlic and onion until translucent, about 2-3 minutes.
  5. Add the bell peppers and cook for another 4-5 minutes, until slightly tender but still crisp.
  6. Return the chicken to the skillet and toss everything together. Cook for another 2 minutes to blend the flavors.
  7. Garnish with fresh parsley and serve hot.

Notes

  • You can adjust the spice level by using more or less Cajun seasoning.
  • This dish pairs well with rice, quinoa, or over a salad.
  • Try adding a splash of lemon juice for extra brightness.
