Description
A flavorful and spicy Cajun chicken dish sautéed with colorful bell peppers. Perfect for a quick weeknight dinner with a Southern twist.

- 2 boneless, skinless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, sliced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the sliced chicken breasts with Cajun seasoning, salt, and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add a little more oil if needed, then sauté the garlic and onion until translucent, about 2-3 minutes.
- Add the bell peppers and cook for another 4-5 minutes, until slightly tender but still crisp.
- Return the chicken to the skillet and toss everything together. Cook for another 2 minutes to blend the flavors.
- Garnish with fresh parsley and serve hot.
Notes
- You can adjust the spice level by using more or less Cajun seasoning.
- This dish pairs well with rice, quinoa, or over a salad.
- Try adding a splash of lemon juice for extra brightness.
