Ingredients
Vegetables:
- 1/2 head green cabbage, chopped
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
Additional Ingredients:
- 1 can (14.5 oz) diced tomatoes, undrained
- 6 cups low-sodium vegetable broth or water
- 1 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp black pepper
- Salt to taste
- Optional: 1–2 tsp hot sauce or red pepper flakes for heat
Instructions
- Heat olive oil: In a large pot over medium heat, add olive oil.
- Sauté vegetables: Add onion, carrots, celery, and garlic. Sauté for about 5 minutes until slightly softened.
- Cook bell peppers: Stir in bell peppers and cook for another 2–3 minutes.
- Add remaining ingredients: Add cabbage, diced tomatoes, broth, and seasonings. Bring to a boil, then simmer for 25–30 minutes until vegetables are tender.
- Adjust seasoning: Taste and adjust seasoning as needed. Serve hot.
