Ingredients

Dough

  • 2 tablespoons unsalted butter (melted)

Boiling Bath

  • ⅓ cup baking soda
  • 6 cups water

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water, active dry yeast, and brown sugar. Stir gently and let the mixture sit for 5 minutes until it becomes foamy, indicating the yeast is active.
  2. Make the dough: Add salt, all-purpose flour, and melted unsalted butter to the yeast mixture. Mix together until a rough dough forms. Knead the dough by hand or using a dough hook on a stand mixer for 5–7 minutes, until it is smooth and elastic.
  3. Let dough rise: Place the dough into a greased bowl, cover it with a clean towel or plastic wrap, and leave it in a warm spot to rise for about 1 hour, or until doubled in size.
  4. Prepare for baking: Preheat the oven to 425°F (218°C) and line two baking sheets with parchment paper. Meanwhile, in a large pot, bring 6 cups of water and ⅓ cup baking soda to a rolling boil.
