Description

This Butter Poached Lobster Recipe offers a luxurious and simple way to enjoy tender, flavorful lobster tails gently poached in rich, melted butter infused with garlic and lemon. Perfect for a special occasion or an elegant seafood dinner, it highlights the delicate sweetness of lobster complemented by fresh herbs and zesty citrus notes.

Ingredients

Seafood

  • 4 lobster tails (thawed if frozen)

Butter Sauce

  • 1 cup unsalted butter (cut into chunks)
  • 2 cloves garlic (smashed)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • pinch of white pepper (or black pepper)

Garnish

  • chopped fresh chives or parsley for garnish

Instructions

  1. Prepare Lobster Tails: Using kitchen shears, carefully cut down the top of each lobster shell and gently pull the meat out, keeping it attached at the base. Set aside.
  2. Melt Butter and Infuse Flavors: In a medium saucepan over low heat, melt the butter slowly with the smashed garlic. Once melted, add lemon zest, lemon juice, salt, and white pepper. Keep the heat low—do not let the butter boil, or it will separate.
  3. Poach Lobster: Gently add the lobster tails to the butter mixture and poach for 6–8 minutes, turning occasionally, until the meat is opaque and tender. The temperature of the butter should stay around 160–180°F to ensure gentle cooking.
  4. Serve: Remove lobster tails from the butter and plate. Spoon some of the warm butter over the top and garnish with fresh herbs. Serve immediately with your choice of sides like mashed potatoes, risotto, or crusty bread.

Notes

  • For the best texture, maintain a gentle poach—never a simmer.
  • You can strain and reuse the butter once cooled.
  • Add a splash of white wine to the butter for an extra depth of flavor.
