Cookie Dough:

- 1 cup brown sugar (packed)

- 2 large eggs
- 2 teaspoons vanilla extract
- 2½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups chopped pecans (toasted)

Instructions
- Preheat the Oven: Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Stir in Pecans: Fold in the chopped toasted pecans.
- Bake: Scoop dough onto baking sheets, spacing them apart. Add a whole pecan on top of each cookie if desired. Bake for 10–12 minutes until lightly golden.
- Cool: Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
