  • 1 cup brown sugar (packed)
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chopped pecans (toasted)

Optional Topping:

  • Extra whole pecans


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Stir in Pecans: Fold in the chopped toasted pecans.
  6. Bake: Scoop dough onto baking sheets, spacing them apart. Add a whole pecan on top of each cookie if desired. Bake for 10–12 minutes until lightly golden.
