Description
A luxurious yet easy appetizer, Burrata Bruschetta combines crispy garlic-rubbed bread, creamy burrata cheese, juicy marinated tomatoes, and fragrant basil for a crowd-pleasing starter that’s perfect for any gathering.
Ingredients
- 1 rustic baguette, sliced on the bias (about 1/2-inch thick)
- 2 tbsp extra-virgin olive oil (plus more for drizzling)
- 1 clove garlic, halved
- 8 oz burrata cheese
- 2 cups ripe tomatoes, diced (heirloom, cherry, or vine)
- 1/4 cup fresh basil leaves, torn
- Salt and freshly cracked black pepper, to taste
- Optional: balsamic glaze, microgreens, pine nuts, pesto
Instructions
- Preheat oven to 425°F (220°C). Arrange sliced baguette on a baking sheet. Brush both sides with olive oil and bake for 8–10 minutes, turning halfway, until golden and crisp. Rub each toast with cut side of garlic while still warm.
- In a bowl, combine diced tomatoes, torn basil, salt, pepper, and a splash of olive oil or balsamic glaze. Let sit to allow flavors to meld.
- Tear burrata into large pieces. Place a portion on each toast slice and gently press to anchor it.
- Spoon tomato mixture over burrata, then drizzle with olive oil and optional balsamic glaze. Finish with more basil, salt, pepper, or garnishes as desired.
- Serve immediately while toast is crisp and cheese is soft.
Notes
- Tomato mixture can be made a few hours ahead and chilled.
- Toasted bread can be made in advance and frozen for up to a month.
- Mini versions make great cocktail bites; let guests assemble for fun.
