Description

This Bunny Carrot Cake is a charming and delicious twist on a classic carrot cake. Featuring moist layers filled with finely grated carrots and warm spices, it’s topped with a smooth cream cheese frosting and creatively arranged to resemble a cute bunny. Perfect for festive occasions or a delightful dessert that appeals to both kids and adults.

Ingredients

Cake

  • 2 cups all-purpose flour
  • 2 cups finely grated carrots (about 4 medium)
  • 4 large eggs
  • 3/4 cup sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Frosting

  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper for easy removal.
  2. Mix dry ingredients: In a medium bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until evenly distributed.
  3. Combine wet ingredients and carrots: In a separate large bowl, whisk together the eggs, sugar, brown sugar, and vegetable oil until smooth. Gently fold in the finely grated carrots.
  4. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cake tender. Divide the batter evenly between the prepared cake pans.
  5. Bake: Place the pans in the oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Once done, remove from oven and let the cakes cool completely on wire racks.
  6. Prepare frosting: Using a mixer, beat the softened cream cheese and powdered sugar together until the frosting is smooth, creamy, and fluffy.
  7. Shape bunny: Carefully cut one of the cooled cakes to create bunny ears and a bow tie shapes. Arrange the two cakes on a platter in the shape of a bunny.
  8. Frost and decorate: Generously spread the cream cheese frosting over the cakes. Decorate the bunny cake with coconut, candies, or sprinkles as desired to add texture and visual appeal.

Notes

  • Make sure the cakes are completely cool before frosting to prevent melting.
  • For extra moistness, you can add 1/2 cup of crushed pineapple or applesauce to the batter.
  • Use food coloring in the frosting or decorations to make the bunny more colorful and festive.
  • This cake can be prepared a day ahead and refrigerated to enhance the flavors.
  • Replace vegetable oil with melted coconut oil for a subtle coconut twist.
