Instructions
- Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper for easy removal.
- Mix dry ingredients: In a medium bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until evenly distributed.
- Combine wet ingredients and carrots: In a separate large bowl, whisk together the eggs, sugar, brown sugar, and vegetable oil until smooth. Gently fold in the finely grated carrots.
- Combine wet and dry mixtures: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cake tender. Divide the batter evenly between the prepared cake pans.
