Description

Buffalo Chicken Roll-Ups are a spicy and creamy appetizer featuring shredded rotisserie chicken blended with cream cheese and cheese, wrapped in flaky puff pastry, baked to golden perfection, and finished with drizzles of buffalo sauce and ranch dressing. Perfect for game days or casual gatherings.

Ingredients

Filling

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 cups (280g) rotisserie chicken, shredded and chopped
  • 1 cup (113g) mozzarella cheese, shredded
  • 1 cup (113g) sharp cheddar cheese, shredded
  • 1/3 cup (84g) buffalo sauce

Pastry and Topping

  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten
  • Ranch dressing, for drizzling
  • Extra buffalo sauce, for drizzling
  • Parsley, for garnish

Instructions

  1. Preheat the Oven and Prepare the Baking Sheet: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and ease clean-up.
  2. Make the Buffalo Chicken Filling: In a medium bowl, combine the cream cheese, shredded rotisserie chicken, mozzarella cheese, sharp cheddar cheese, and buffalo sauce. Mix thoroughly until all ingredients are well incorporated and the mixture is creamy.
  3. Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry into a 9×12-inch rectangle, ensuring an even thickness for uniform baking.
  4. Fill and Roll the Pastry: Spread the buffalo chicken mixture evenly over the puff pastry, leaving a small border around the edges to seal the roll. Carefully roll the pastry tightly into a log shape, sealing the edges as you go to prevent filling from escaping. Slice the log into 1-inch pieces to form individual roll-ups.
  5. Bake the Roll-Ups: Place the roll-ups on the prepared baking sheet. Brush the tops with the beaten egg to achieve a golden, glossy finish. Bake in the preheated oven for 15–18 minutes, or until the pastry is puffed up and golden brown. For extra warmth and flavor, optionally top with more buffalo chicken mixture and bake for an additional 6–8 minutes.
  6. Serve and Enjoy: Once baked, remove the roll-ups from the oven. Drizzle with additional buffalo sauce and ranch dressing for added creaminess and spice. Garnish with fresh parsley for a pop of color and freshness. Serve warm as a delicious appetizer or snack.

Notes

  • Use rotisserie chicken for convenience and flavor, but shredded cooked chicken breast can be substituted.
  • Ensure the cream cheese is softened to room temperature for easier mixing.
  • For extra crispiness, bake the roll-ups on a wire rack placed over the baking sheet.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven to maintain crispness.
  • Adjust buffalo sauce quantity to control the spice level according to your preference.
