Description

These spicy, creamy, and crispy quesadillas are packed with shredded chicken, buffalo sauce, and melty cheese — perfect for quick dinners or game day gatherings.


Ingredients

  • 2 cups cooked, shredded chicken (rotisserie recommended)
  • 1/3 cup buffalo sauce
  • 1/4 cup cream cheese, softened
  • 1 1/2 cups shredded Monterey Jack cheese (or cheddar/pepper jack)
  • 4 medium flour tortillas
  • 2 green onions, thinly sliced
  • 1 tbsp butter
  • Ranch or blue cheese dressing (for dipping)


Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce and cream cheese until well combined and creamy.
  2. On one half of each tortilla, layer shredded cheese, buffalo chicken mixture, green onions, and more cheese. Fold the tortilla over to close.
  3. Heat a skillet over medium heat and melt a bit of butter. Cook each quesadilla 2–3 minutes per side, until golden brown and cheese is melted.
  4. Let quesadillas rest 1 minute before slicing into wedges. Serve with ranch or blue cheese dressing for dipping.

Notes

  • To reduce spice, add more cream cheese or use a mild buffalo sauce.
  • Swap in your favorite melty cheese or add jalapeños for extra heat.
