Perfect for game day or a flavorful weeknight dinner, it’s topped with shredded rotisserie chicken tossed in spicy buffalo sauce and finished with crumbled blue cheese for extra richness.
Ingredients
Pizza Base
- 1 pound homemade or store-bought pizza dough, room temperature
Sauces & Cheese
- ⅓ cup blue cheese dressing (or ranch dressing)
- 6 ounces mozzarella cheese, shredded
- ¼ cup crumbled blue cheese
Toppings
- 2 cups shredded cooked chicken (rotisserie chicken recommended)
- ¼ cup buffalo wing sauce, plus more for serving (optional)
Optional Garnishes
- Blue cheese or ranch dressing
- Sliced green onions
- Chopped cilantro
Instructions
- Preheat and Prep: Preheat your oven to 450°F (232°C). If you have a pizza stone, place it inside the oven to heat up. Roll out the pizza dough on a floured surface into a 12-inch circle. If using a pizza peel, transfer the dough to it; otherwise, place the dough on parchment paper or a baking sheet for easy handling.
- Add Toppings: Spread the blue cheese dressing evenly over the surface of the dough. Sprinkle half of the shredded mozzarella cheese on top. In a separate bowl, toss the shredded cooked chicken with the buffalo wing sauce until fully coated. Distribute the buffalo chicken evenly over the cheese layer. Top the pizza with the remaining mozzarella and sprinkle crumbled blue cheese over everything.
- Bake: Carefully transfer the pizza to the preheated pizza stone using the peel or parchment paper. Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese has melted and is bubbly.
- Serve: Remove the pizza from the oven and let it cool slightly. Garnish with sliced green onions, chopped cilantro, and additional blue cheese or ranch dressing or hot sauce if desired. Slice and serve warm for the best flavor and texture.
Notes
- Using rotisserie chicken saves time and adds great flavor.
- If you don’t have a pizza stone, a baking sheet will work fine; just preheat the sheet in the oven for a crispier crust.
- Adjust the amount of buffalo wing sauce to suit your preferred spice level.
- For a milder option, substitute ranch dressing for blue cheese dressing.
- Leftover pizza reheats well in a skillet or oven to maintain crust crispness.
