Description

This Buffalo Chicken Pizza combines the spicy tang of buffalo wing sauce with creamy blue cheese and mozzarella, layered atop a crispy homemade or store-bought pizza dough. Perfect for game day or a flavorful dinner, this quick 22-minute recipe delivers a crispy crust and melty cheese with tender buffalo chicken and optional garnishes like green onions and ranch or blue cheese dressing.

Ingredients

Pizza Base

  • 1 pound homemade or store-bought pizza dough, room temperature
  • ⅓ cup blue cheese dressing (or ranch dressing)

Cheeses

  • 6 ounces mozzarella cheese, shredded
  • ¼ cup crumbled blue cheese

Toppings

  • 2 cups shredded cooked chicken (rotisserie chicken recommended)
  • ¼ cup buffalo wing sauce, plus more for serving (optional)

Optional Garnishes

  • Blue cheese or ranch dressing
  • Sliced green onions
  • Chopped cilantro

Instructions

  1. Preheat and Prep: Preheat your oven to 450°F (232°C). If available, place a pizza stone inside to heat up. Roll out the pizza dough into a 12-inch circle. Use a pizza peel if you have one, or prepare parchment paper or a baking sheet to transfer the pizza later.
  2. Add Toppings: Spread the blue cheese dressing evenly over the rolled-out dough. Sprinkle half of the shredded mozzarella on top. In a bowl, mix the shredded cooked chicken with the buffalo wing sauce until thoroughly coated. Distribute the buffalo chicken evenly over the cheese layer. Then top with the remaining mozzarella and sprinkle with the crumbled blue cheese.
  3. Bake: Carefully transfer the prepared pizza onto the preheated pizza stone using the peel or slide it onto the stone with the parchment paper. Bake for 12 to 15 minutes, or until the crust turns golden brown and the cheese is melted and bubbling.
  4. Serve: Remove the pizza from the oven and let it cool slightly before slicing. Garnish with sliced green onions, extra blue cheese or ranch dressing, or additional hot sauce if desired. Serve warm and enjoy!

Notes

  • If you don’t have a pizza stone, a baking sheet will work, but preheating it helps achieve a crispier crust.
  • Rotisserie chicken is recommended for convenience and flavor, but any cooked chicken can be used.
  • Adjust the amount of buffalo wing sauce to your preferred level of spiciness.
  • Optional garnishes like cilantro add a fresh contrast to the rich flavors.
  • For a milder version, substitute buffalo wing sauce with barbecue sauce and blue cheese dressing with ranch dressing.
