Description

Delicious and easy-to-make Buffalo Chicken Pastry Bites combine tender shredded chicken tossed in spicy buffalo sauce with creamy cheeses and ranch dressing, all wrapped in flaky puff pastry. These bite-sized appetizers are perfect for parties, game days, or a flavorful snack served warm and garnished with fresh parsley.

Ingredients

Buffalo Chicken Filling

  • 1 cup cooked chicken, shredded
  • 2 tablespoons buffalo sauce
  • 2 tablespoons cream cheese, softened
  • ¼ cup shredded mozzarella cheese
  • ¼ cup shredded cheddar cheese
  • 1 tablespoon ranch dressing
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt & black pepper, to taste

Pastry and Topping

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon butter, melted
  • 1 teaspoon chopped fresh parsley (for garnish)
  • ¼ teaspoon flaky sea salt (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the pastry bites.
  2. Prepare the Buffalo Chicken Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, mozzarella, cheddar, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Prepare the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet evenly. Use a knife or a pizza cutter to divide the pastry into nine equal squares.
  4. Fill and Seal the Pastry: Spoon an even amount of the buffalo chicken mixture into the center of each pastry square. Fold the corners of each square together and pinch the edges firmly to seal, creating a small pouch that will hold the filling inside while baking.
  5. Bake the Pastry Bites: Place the filled pastries seam-side down on the prepared baking sheet. Brush the tops of each pastry with the beaten egg to ensure a golden, shiny finish. Bake in the preheated oven for 18-20 minutes or until the pastry turns golden brown and flaky.
  6. Finish and Serve: After baking, brush the warm pastry bites with melted butter for an extra touch of richness. Sprinkle chopped fresh parsley and optional flaky sea salt over the tops. Serve these flavorful buffalo chicken pastry bites warm, ideally with ranch or blue cheese dressing for dipping.

Notes

  • Use cooked chicken such as rotisserie or leftover roasted chicken for ease.
  • Adjust the amount of buffalo sauce to control the spice level.
  • Puff pastry must be fully thawed before rolling to prevent tearing.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in an oven or air fryer to maintain crispiness.
  • Optional: Serve with celery sticks to balance the spice.
