Description

This one-pot Buffalo Chicken Pasta is a creamy and spicy delight that’s perfect for a quick and flavorful dinner. Tender chicken cooked in a zesty buffalo sauce, mixed with pasta and gooey cheeses, topped with green onions – it’s a dish that will please the whole family.


Ingredients

For the Buffalo Chicken Pasta:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/2 cup buffalo wing sauce (like Frank’s RedHot)
  • 3 cups chicken broth
  • 12 oz penne or rotini pasta (uncooked)
  • 4 oz cream cheese, cubed
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 2 green onions, sliced (for garnish)


Instructions

  1. In a large pot or deep skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt and pepper, and cook for 5–6 minutes until browned and mostly cooked through.
  2. Add garlic and sauté for 1 minute.
  3. Pour in buffalo sauce and chicken broth, then stir in the uncooked pasta. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  4. Stir in cream cheese and dressing, mixing until creamy and smooth.
  5. Remove from heat and stir in cheddar and mozzarella until melted and combined.
  6. Garnish with sliced green onions before serving.

Notes

  • Adjust the buffalo sauce to your preferred spice level.
  • Add a handful of baby spinach or diced celery at the end for added texture and flavor.
