This one-pot Buffalo Chicken Pasta is a creamy and spicy delight that’s perfect for a quick and flavorful dinner. Tender chicken cooked in a zesty buffalo sauce, mixed with pasta and gooey cheeses, topped with green onions – it’s a dish that will please the whole family.
Ingredients
For the Buffalo Chicken Pasta:
- 1 tablespoon olive oil
 - 1 pound boneless, skinless chicken breasts, diced
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 2 cloves garlic, minced
 - 1/2 cup buffalo wing sauce (like Frank’s RedHot)
 - 3 cups chicken broth
 - 12 oz penne or rotini pasta (uncooked)
 - 4 oz cream cheese, cubed
 - 1/2 cup ranch or blue cheese dressing
 - 1 cup shredded cheddar cheese
 - 1/2 cup mozzarella cheese
 - 2 green onions, sliced (for garnish)
 
Instructions
- In a large pot or deep skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt and pepper, and cook for 5–6 minutes until browned and mostly cooked through.
 - Add garlic and sauté for 1 minute.
 - Pour in buffalo sauce and chicken broth, then stir in the uncooked pasta. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
 - Stir in cream cheese and dressing, mixing until creamy and smooth.
 - Remove from heat and stir in cheddar and mozzarella until melted and combined.
 - Garnish with sliced green onions before serving.

- Adjust the buffalo sauce to your preferred spice level.
 - Add a handful of baby spinach or diced celery at the end for added texture and flavor.
