Description

This Bruschetta Pasta Salad is a refreshing twist on traditional bruschetta, combining pasta with fresh tomatoes, basil, and mozzarella in a tangy balsamic dressing. It’s a perfect summer side dish or light meal.


Ingredients

Pasta:

  • 12 ounces rotini or bowtie pasta

Bruschetta Mixture:

  • 4 Roma tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1/4 cup fresh basil (chopped)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1/3 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Additional:

  • 1 cup mozzarella pearls or diced fresh mozzarella
  • 1/4 cup grated Parmesan cheese (optional)
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Cook the Pasta: Cook pasta until al dente, drain, rinse, and set aside to cool.
  2. Prepare Bruschetta Mixture: In a bowl, combine tomatoes, onion, garlic, basil, balsamic vinegar, lemon juice, olive oil, salt, pepper, and red pepper flakes. Let marinate.
  3. Combine: Add cooled pasta to the bowl, toss with the tomato mixture. Stir in mozzarella and Parmesan if desired.
  4. Chill: Refrigerate for at least 30 minutes before serving. Drizzle with balsamic glaze, if using.

Notes

  • For added protein, consider adding grilled chicken or chickpeas.
  • Best served the same day but can be stored in the fridge for up to 2 days.
