Ingredients
Pasta:
- 12 ounces penne or spaghetti pasta
Chicken:
- 2 tablespoons olive oil (divided)
- 2 boneless, skinless chicken breasts (sliced)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Bruschetta Topping:
- 4 Roma tomatoes (diced)
- 3 garlic cloves (minced)
- 1/4 cup fresh basil (chopped)
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon crushed red pepper flakes (optional)
Garnish:
- 1/2 cup grated Parmesan cheese
- Extra chopped basil and balsamic glaze for garnish (optional)
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: Season and cook the chicken in olive oil until golden and cooked through. Set aside.
- Prepare the Bruschetta Topping: Sauté tomatoes, garlic, basil, balsamic vinegar, and red pepper flakes until softened.
- Combine: Add chicken, pasta, and Parmesan cheese to the skillet. Toss everything together.
- Serve: Garnish with additional basil and balsamic glaze if desired. Serve warm.

- For added richness, stir in a tablespoon of butter or a splash of pasta water before serving.
