Description

This Bruschetta Chicken Pasta recipe combines the flavors of classic bruschetta with tender chicken and pasta for a satisfying meal that’s easy to make. Perfect for a quick weeknight dinner or a casual gathering with friends.


Ingredients

Pasta:

  • 12 ounces penne or spaghetti pasta

Chicken:

  • 2 tablespoons olive oil (divided)
  • 2 boneless, skinless chicken breasts (sliced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Bruschetta Topping:

  • 4 Roma tomatoes (diced)
  • 3 garlic cloves (minced)
  • 1/4 cup fresh basil (chopped)
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon crushed red pepper flakes (optional)

Garnish:

  • 1/2 cup grated Parmesan cheese
  • Extra chopped basil and balsamic glaze for garnish (optional)

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: Season and cook the chicken in olive oil until golden and cooked through. Set aside.
  3. Prepare the Bruschetta Topping: Sauté tomatoes, garlic, basil, balsamic vinegar, and red pepper flakes until softened.
  4. Combine: Add chicken, pasta, and Parmesan cheese to the skillet. Toss everything together.
  5. Serve: Garnish with additional basil and balsamic glaze if desired. Serve warm.

Notes

  • For added richness, stir in a tablespoon of butter or a splash of pasta water before serving.
